As many of you probably understand, we are on a strict budget now that I'm staying at home. I am trying to search for good recipes that are also easy on the wallet, and I thought, what better place than in blogland! If you have a good, reasonably priced recipe, please share!! We are NOT picky!

Sounds so cliche', but pinto beans rule. I love them left-over in tortillas with cheese and salsa. I am going to have to dig around and find you some good ones, Lauren!!

If you like mex food I have got a really easy green enchilda recipe. I also have some crock pot recipes that I got from my mom-in-law that are very simple-cheap-tasty. One is a Gusiado type meal that goes great with rice and another is called Picante Chicken. Just let me know... Did on the recipes? I would love some of your too... ;)

Chicken Pot Pie (not real healthy)
1 can chicken
1 can veg all
1 can cream of chicken soup
1 pie shell set
mix all together in pie shell and bake for 25 minutes or so at 350.
Under 5.00 meal
This may not be the cheapest to start with, but you can eat the leftovers for days. We make our own Chicken Alfredo. Buy 1 pack of noodles, the alfredo sauce and grill some chicken. If makes a huge amount, but it is better the next day when you heat it up b/c the sauce has had time to sink in there. We have eaten on this for 2 or 3 days.
I buy a lot of meat on sale for grilling (pork chops, chicken breasts, etc.) and freeze them individually (or in packs of two for Ryan and I.) We grill A LOT (at least twice a week!) Add in a salad and some pasta and we've got a good meal that didn't break the bank. I'll think of some more this evening and send them along. My FAVORITE thing about grilled fajita chicken is that it NEVER goes to waste...fajitas, quesadillas, fajita salad, fajita nachos...You get the idea!
Why don't you just come over to my house and I'll feed you!
I have this easy recipes that you can make another meal from the leftovers. It could last you a whole week to eat off of.
Philly Cheese Steaks
-Roast
-1 jar/can of pepperocini (near pickles)
-1 jar/can of water
Cook roast in crock pot for the day add the jar of pepperocini and the water. Make sure the meat is nice and tender. I normally put it on in the morning on high and let it cook the entire day. Then get some hoagie rolls and mozzerella cheese...yummy! That will last you probably two-three meals. Then with the left over roast you can make beef stroganoff.
Beef Stroganoff
-1 bag of egg noodles
-1 can of cream of mushroom
-1 16oz sour cream
-leftover roast (take out extra pepperocinis)
-milk to make gravy
Cook noodles and add in all the rest for about 20 min on low heat.

Thank you for typing those for me. I'm getting hungry reading them! Ryan, I love pasta the next day. I buy whole grain organic pasta (not the cheapest) and mix it with tomatoe basil pasta sauce and it is incredible the next day!

I still use a lot of the recipes from when we cooked together Senior year. They are some of my favs!! I will take ANY recipe you give me!
GREEN ENCHILDAS
2 sm cans mild green chilis
1 lb ground meat
1 pk of corn or flour tortillas
1 can of cream of chicken
1 can of cream of mushroom
2 cups of milk
1 to 2 Tbsp of butter
1 Bag of SHREDDED mixed cheeses
Mexican spices (Cummin, salt,pepper, garlic,) just for taste...
BROWN MEAT, SET ASIDE.
SAUCE:
MIX SOUPS, 1 CAN OF WATER (EMPTIED SOUP CAN), MILK, BOTH CANS OF CHILIES, AND BUTTER IN LARGE PAN AND COOK UNTIL IT BOILS (ADD ALITTLE MEAT AND CHEESE TO THIS). IF CORN MICROWAVE TORTILLAS WITH WET PAPERTOWEL UNTIL SOFT. IF FLOUR, SKIP.
YOU CAN EITHER ROLL THEM WITH A SPOON OF MEAT, CHEESE, AND SMALL SPOON OF SAUCE INSIDE AND PLACE IN PAN OR MAKE A CASSEROLE. EITHER IS PRETTY GOOD.. ONCE COMPLETED SPRINKLE THE REMAINING CHEESE ON TOP AND PLACE IN MICROWAVE AGAIN UNTIL THE SAUCE STARTS TO BOIL... YOU ARE DONE... THIS WILL USUALLY LAST MY HUBBY AND I ABOUT A WEEK. OF COURSE IT CAN BE HEALTHED UP BY USING LOW FAT CHEESES AND SAUCE AND TURKEY MEAT INSTEAD. ENJOY!!!
We grill a lot also -- vegetables, too. I feel like a millionaire eating some of the meals from the grill. The leftovers are easy to reuse also. Beans are a fantastic thing to have in your pantry. I have a couple of casseroles that a popular. One is made with egg noodles, ground beef, and taco seasoning (plus other ingredients) to make a mexican lasagna dish.
We've also started making smoothies at home recently. I use plain or vanilla yougurt, frozen strawberries (no sugar added), and pomegranate juice.

I am now starving and Trent will not be around for dinner for the next several months. I guess I will have to eat it all myself and freeze freeze freeze! Great comments, I am writing them down too!
How about a cookbook...Southern Living Easy Weeknight Favorites. Southern Living taste but only a few ingredients (no 35 ingredient recipes here). Extremely easy, very delicious...my most used cookbook.
I thought I posted this earlier, but beans and rice...I use 2 servings of brown minute rice and add one can of drained black beans. Rachel likes sliced jalapenos with hers. I LOVE slices of purple onion with mine. Talk about cheeeeeeeap!! Filling, too.
